So far so good.. things here are ok. Mom is back, so I don't have to shoot up the cat anymore (she's diabetic) and she likes the rhododendrons I planted in her front yard for her. Whew! I got them on sale! One for 6$ and one for 9$! They sure are pretty, too. Actually, one is a pink azalea, but I figure that's close enough. :)

I tried a new recipe a few days ago. It turned out quite well, if you ask me! A few touch-ups and it's a family favourite! It's Monterey Chicken - yummy stuff! I got the recipe from cooks.com, and I just omitted the avocado and chillies, due to local family preferences. :) I give it the Elli seal of approval!

If you're not totally down on chiles, try this Basque garlic soup (berkatza sopa):

1/4 cup olive oil
3/4 cup thinly sliced garlic
2 quarts vegetable boullion
4 to 6 large red chile pods, cored and seeded
4 cups day-old crusty bread, cut into 1-inch cubes

Saute the garlic in the olive oil until golden brown. Add everything else, and cook for about 15 minutes. For a variation, you can grate Monterey Jack cheese over it after putting it in bowls. If you don't like things too spicy, pull the chiles out when it's done cooking, or they may continue to "heat up" the soup in the fridge.

Usually in the produce department or the ethnic foods department at the grocery store, although they might not be as prevalent everywhere as they are here. They usually come in a bag a little bigger than one of those gallon-size freezer Ziplocs. The pods are about 4 to 8 inches long. They'd probably be available online somewhere as well.
